Spinach Squares!

Food is good isn’t it?  And we are approaching the American holiday all about food and family! Thanksgiving!

So here I’m going to share a recipe that I found on my journeys that I haven’t yet tried… but that I want to.   I found it over at Jen’s place and she is a lovely young woman who blogs on Youtube with her husband Don.

Jen’s Spinach Squares-

20 oz. of frozen spinach

1 cup of flour

1 tsp salt

1 tsp baking powder

1 lb jack pepper cheese

1/2 onion chopped

3 lg. eggs

4 tbl butter

Heat oven to 350 degrees, Mix dry ingredients and then add wet ingredients and cheese.  Pour into a 9×11 casserole and bake at 350 for about 40 minutes.  You can take it out of the oven and freeze it for later.  When you are ready to eat it just pop it back in and reheat for 15 minutes at 350.

Oh, the 4 tbl of butter goes into the casserole dish and pop that into the oven to melt it before adding all the other ingredients.  That will prevent your spinach squares from sticking so you can cut them into one inch squares.
